The brand name Sunshine was best known through the 20th century as a producer of jelly crystals and milk powders, including such appetising flavours as calf's feet! However by the 1960s, Sunshine had branched out to cereals, drinks, canned goods and instant rice based meals, like this instant rice risotto. Sunshine was sold to Bluebird Foods in the 1970s, and then on to Goodman Fielder. However instant rice risottos can still be found in supermarkets, although no longer produced by Sunshine.

In searching for a recipe for 'Sweet & Sour Pork' I had cut from the back of a yellow box of Rice Risotto, I found this site with an even earlier version that I remember. What I have at the top of my recipe is Edmonds, but cannot find a reference for Edmonds, and now see it has been branded as Diamond. A fascinating history.
